Successful F&B management is a balancing act between delivering dreams and controlling the numbers. Our overall ambition in this specialization is to equip you with the right managerial tools and mindset to make you a future-proof F&B manager, entrepreneur, or concept developer. With our world-class faculty, you will repeatedly train and perform this balancing act in and outside the classroom.

Pushed to the limits of your creativity, you will develop new ideas for some of the industry’s top players, assess your ideas’ economic and market viability, and think about how to deliver them excellently and in the proper service setting. During your concept week in one of EHL’s F&B outlets, you must demonstrate that you can successfully handle people and stressful situations under real-life conditions. Are you ready?

This module consists of four courses that will immerse you in the intricacies of foodservice economics, where you will gain invaluable insights into the dynamics of the food and hospitality industries, discerning the nuanced factors shaping the supply and demand of food goods.

Foodservice Operations Management

This module comprises four courses to enhance your proficiency in F&B management and cost control. Gain essential insights into the impact of day-to-day cost management, explore the transformative potential of technology, and delve into foodservice operations and supply chain logistics.

F&B Management in Action

This module consists of a one-week F&B Field Trip followed by a Concept week. During the field trip, you will be immersed in F&B experiences and have several opportunities to discuss with F&B managers and owners. For concept week, you will experience F&B services by designing and creating a profitable concept business with other students.

Dr. Marc Stierand

Dr. Marc Stierand, born into a family business, developed customer service skills early on and pursued his passion for food by becoming a trained chef in Michelin-starred restaurants. Now a Full Professor of Service Management at EHL and the Founding Director of the Institute of Business Creativity, Marc brings two decades of international teaching experience to his work.

He is recognized as an authority on culinary and business creativity, a research field he started in 2007. His ability to transfer insights from research for teaching and practice is thought is sought after by other top business schools like CEIBS and IMD and leading global corporations, where he teaches executives or advises them on creativity, aesthetics and innovation. His research has attracted several millions in funding, has been published in top-tier hospitality management and general management journals, and has won several awards including the ‘Tudor Rickards and Susan Moger Best Paper Award.

Moreover, Dr. Stierand serves on the editorial boards of a number of academic journals, company advisory boards, and executive board of the Swiss Food and Nutrition Valley. Professionally, he’s dedicated to fostering innovation through creativity for the business world, though privately, he admits to being less successful in coaching his Cocker Spaniel, Alfons.

No, you don't need any prior experience in F&B. Meeting the minimum requirement for MiHM program ensures that you have an equal opportunity for acceptance, just like any other applicant.

Can I change my specialization if I've already chosen one?

You are required to select your specialization track upon application for the program. However, the program management can support specialization changes during the first semester of the program on a case basis, to align with your interests and aspirations.
